Commercial coffee liqueurs are staples for classic cocktails like the White Russian, Black Russian, or a simple pour over ice. However, mass-produced versions often rely on artificial flavorings, high fructose corn syrup, or mystery additives. When you make your own coffee liqueur at home, you have complete control over the quality of your ingredients, sweetness levels, and spirit base.
This recipe uses whole, real ingredients: coarsely ground espresso beans, a full Madagascar vanilla bean split down the center, clean 80-proof vodka, and a homemade simple syrup. The result is a smooth, aromatic liqueur with bold roasted notes and natural vanilla warmth.
Steeping Time: Fast vs. Extended Infusion
- Quick Turnaround (1–2 Weeks): If you are in a pinch, the alcohol extracts enough coffee flavor and sweetness within 7 to 14 days to make a perfectly enjoyable liqueur.
- Extended Steeping (1–2 Months or More): Letting the jar rest in a dark pantry for 6 to 8 weeks rounds out the alcohol bite and pulls out subtle chocolate and woodsy vanilla undertones that mimic premium aged cordials.
Key Tips for Success
Mind Your Batch Size: The recipe below makes roughly 8 cups (2 quarts) of liqueur. If steeping in a standard 2-quart mason jar, split the batch between two jars or scale the recipe down by half to leave adequate headspace for shaking.
Coarse Grind Is Critical: Use a coarse French press grind rather than fine espresso powder. Fine grounds will pass right through mesh strainers and leave a muddy sediment at the bottom of your finished bottle.
Filter Twice: Pour the liqueur through a wire mesh sieve first to catch the bulk grounds and vanilla pod, then run it through a standard basket coffee filter or cheesecloth for crystal-clear clarity.
Homemade Coffee Liqueur
Equipment
- 1 Half-Gallon (2-Quart) Wide-Mouth Mason Jar with Lid for steeping the infusion
- 1 Medium Saucepan / Pot for boiling the sugar and water into simple syrup
- 1 Measuring Cup Set liquid measuring cup for water/vodka, dry cup for sugar/grounds
- 1 Fine-Mesh Strainer for initial straining of grounds and vanilla bean
- Coffee Filters or Cheesecloth to line the strainer for a crystal-clear second pass
- 1 Kitchen Funnel for clean pouring into bottles
- Bottles for Storage swing-top glass bottles or clean liquor bottles with tight seals
- 1 Paring Knife for splitting the vanilla bean lengthwise
Materials
- 4 cups Vodka 80 proof
- 1 cup Coarse Ground Espresso Beans or dark roast coffee
- 1 whole Vanilla Bean split lengthwise
- 3 cups White Granulated Sugar
- 4 cups Water
Instructions
- Make the Simple Syrup: Combine 4 cups of water and 3 cups of white sugar in a large saucepan. Bring to a boil, stirring until the sugar is completely dissolved. Remove from heat and allow the syrup to cool completely to room temperature.
- Combine Aromatics & Alcohol: In a large, clean glass jar (at least 2.5–3 quart capacity) or gallon jug, add 1 cup of coarsely ground espresso beans and the split vanilla bean.
- Add Liquids: Pour in 4 cups of vodka and the cooled simple syrup.
- Seal & Shake: Tightly cap the jar and give it a vigorous shake to incorporate the grounds, syrup, and vodka.
- Steeping: Store the jar in a cool, dark cabinet or pantry. Shake gently once every few days. Let steep for a minimum of 1 to 2 weeks (or up to 2–3 months for deeper extraction).
- Strain & Bottle: When ready, pour the liqueur through a fine-mesh strainer lined with a coffee filter or cheesecloth to remove all grounds and vanilla remnants. Bottle the clear liqueur into swing-top glass bottles.
